There really isn't too much to say about this chicken, other than make it...tonight. It has six ingredients you likely have in your pantry/fridge, it can be prepped ahead of time, and it's delicious. It also looks and tastes impressive - almost like you slaved in the kitchen for hours. It's on constant rotation in our house, and I promise it will be at your too.
Chicken with Goat Cheese + Basil
Recipe from Barefoot Contessa at Home
Ingredients:
- 6 boneless chicken breasts, skin on.
- 8-10 oz. garlic and herb goat cheese.
- 6 large fresh basil leaves
- Olive oil
- Salt and pepper
Directions:
- Preheat oven to 375.
- Place the chicken breasts on a sheet pan. Loosen the skin from the chicken with your fingers, leaving one side attached. Cut the goat cheese into 1/2 inch thick slices and place 1-2 slices plus a large basil leaf under the skin of the chicken. Pull the skin over as much of the meat as possible so the chicken won't become too dry.
- With your fingers, rub each piece of chicken with olive oil then sprinkle generously with salt and pepper.
- Bake the chicken for 35-40 minutes, until the skin is lightly browned and the chicken is cooked through.
