Recipe: Chicken with Goat Cheese + Basil

There really isn't too much to say about this chicken, other than make it...tonight.  It has six ingredients you likely have in your pantry/fridge, it can be prepped ahead of time, and it's delicious.  It also looks and tastes impressive - almost like you slaved in the kitchen for hours.  It's on constant rotation in our house, and I promise it will be at your too.

Chicken with Goat Cheese + Basil
Recipe from Barefoot Contessa at Home

Ingredients:
  • 6 boneless chicken breasts, skin on.
  • 8-10 oz. garlic and herb goat cheese.
  • 6 large fresh basil leaves
  • Olive oil
  • Salt and pepper
Directions:
  1. Preheat oven to 375.
  2. Place the chicken breasts on a sheet pan.  Loosen the skin from the chicken with your fingers, leaving one side attached.  Cut the goat cheese into 1/2 inch thick slices and place 1-2 slices plus a large basil leaf under the skin of the chicken.  Pull the skin over as much of the meat as possible so the chicken won't become too dry.
  3. With your fingers, rub each piece of chicken with olive oil then sprinkle generously with salt and pepper.
  4. Bake the chicken for 35-40 minutes, until the skin is lightly browned and the chicken is cooked through.
Enjoy!
