cake batter cookies

So I promised you recipes on Tuesdays and today I am starting with a favorite among my friends and family- cake batter cookies!  I make these to celebrate friends' birthdays, for potlucks, and for any meeting at school where food is required as an incentive to get people to attend.  Fair warning though, these bad boys go fast and you can eat about 5 per sitting.  I usually make a double batch so I can leave some in our cake dome for Josh.  Also, these are extremely versatile- you can change out cake mix flavors or add in different goodies that you have on hand.  M&Ms are always a popular substitute for chocolate chunks... Cake Batter Cookies
Recipe from Addie's Kitchen Favorites (cookbook of Red Rock Ranch in Kelly, Wyoming)

Ingredients:
  • 8 oz. cream cheese, softened
  • 1/4 c. butter
  • 1 egg
  • 1/4 tsp. vanilla
  • 1 box yellow cake mix
  • 1 package chocolate chunks (or other mix-ins)
Directions:
  1. Preheat oven to 375 F.  Line a cookie sheet with a silpat liner or parchment paper.
  2. In a mixer bowl, cream the cream cheese and butter until light and fluffy (usually about 5 minutes)
  3. Add the egg and vanilla and mix until thoroughly combined.
  4. Add the boxed cake mix to the batter and stir until all dry ingredients are moistened.
  5. Drop the batter onto the prepared cookie sheet.  
  6. Bake for 10-12 minutes (For softer cookies, cook for 10 minutes and let them cool on the cookie sheet after they are removed from the oven- this makes them gooey!)
  7. Cool the cookies on a wire rack.

  2. ridiculously good.... though I have to say that saying that you can eat FIVE is a little low... I think I am on number SEVEN right now!!!
