Just a quick recipe post today to share my first attempt at gluten free baking with you all. This cookie recipe comes from the back of the Trader Joe's oatmeal package, and it came highly recommended. Though they don't taste like a traditional cookie, these cookies combine chocolate and peanut butter (SCORE!) and the oats give them a crispy touch. Not too shabby if you ask me...
Peanut Butter + Chocolate Chip Oatmeal Cookies
Trader Joe's Rolled Oats Package
Ingredients:
- 1/4 C. butter
- 1 1/4 tsp. baking soda
- 3/4 C. sugar
- 3 C. rolled oats
- 3/4 C. brown sugar
- 6 oz. chocolate chips
- 2 eggs
- 1/2 C. chopped nuts (I omitted.)
- 1 tsp. vanilla
- 1 C. peanut butter
Directions:
- Preheat oven to 350.
- In a large bowl, combine sugar, brown sugar, and butter and beat until creamy.
- Add eggs, vanilla, baking soda and mix well.
- Add peanut butter and mix.
- Stir in oats, chocolate chips, and nuts.
- Scoop teaspoon of dough onto greased cookie sheet about 2 inches apart.
- Bake 10-12 minutes until lightly brown on edges.
