Chicken Pesto Pasta
Ingredients:
- 1 package pre-cooked chicken strips (I use the kind you can buy in the grocery store near the bacon. You could also cook your own chicken, but I am going for easy, easy on this one.)
- 1 tsp. garlic, chopped (Again, I use the pre-chopped garlic that you just scoop out of a jar.)
- 1 Tbs. olive oil
- 1 package Buitoni Cheese Tortellini (Find it in the deli section of most grocery stores)
- 1 package of Buitoni pesto
- Parmesan cheese to taste
Directions:
- Bring a large pot of water to a boil and cook pasta according to package directions. (About 8 minutes.)
- While pasta cooks, heat olive oil and garlic in a saute pan. Add chicken and saute to warm through. Place chicken in a bowl.
- Drain the pasta and place in the bowl with the chicken. Add pesto (as much as desired- I usually use about 3/4 of a package) and toss to coat.
- Sprinkle with parmesan cheese and serve warm.
Enjoy!
